  • 1 medium yellow onion, finely chopped
  • 2 large garlic cloves, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika (smoked or sweet)
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup water
  • 1 tablespoon olive oil or vegetable oil
  • About 8 small corn or flour tortillas
  • Optional toppings: chopped cilantro, diced onions, lime wedges, shredded cheese, salsa

Instructions

  1. Finely chop the onion and mince the garlic cloves. Measure out all your spices and have them ready.
  2. Place a large skillet over medium-high heat and add 1 tablespoon of oil. Heat until the oil shimmers but does not smoke.
  3. Add the chopped onion to the skillet and sauté until translucent and slightly golden, about 3-4 minutes. Add the garlic and cook for 30 seconds until fragrant.
  4. Add the ground beef to the skillet, breaking it up with a spatula. Spread it out evenly and let it sit undisturbed for about 2 minutes to start crisping.
  5. Sprinkle chili powder, cumin, paprika, oregano, salt, and black pepper over the beef. Pour in 1/4 cup water to help spices bloom and coat the beef.
  6. Stir the beef, breaking it into smaller pieces, then spread it out again. Let it cook undisturbed for a couple of minutes to develop crispy edges. Repeat stirring and crisping until beef is browned and crunchy in spots, about 6-8 minutes.
  7. Warm the tortillas on a dry skillet or wrapped in foil in a low oven until pliable, about 2-3 minutes.
  8. Spoon the crispy seasoned beef into tortillas and add your favorite toppings like cilantro, diced onions, and a squeeze of lime.

Notes

Do not overcrowd the pan to avoid steaming the beef. Let the beef rest undisturbed to develop crispy edges. Adding water helps spices bloom and keeps beef moist. Reheat leftovers in a skillet to maintain crispiness. Corn tortillas are naturally gluten-free; check flour tortillas if sensitive.
