A quick and flavorful sheet pan dinner featuring salmon fillets baked with a zesty lemon butter garlic sauce, perfect for busy weeknights.

  • 4 skin-on salmon fillets, about 6 oz (170 g) each
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 large lemon, zested and juiced
  • 2 tablespoons fresh parsley, chopped (optional)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 cup asparagus tips or baby potatoes, halved (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil to prevent sticking.
  2. In a medium bowl, whisk together melted butter, minced garlic, lemon zest and juice, olive oil, salt, and pepper to make the lemon butter garlic sauce.
  3. Pat dry the salmon fillets with paper towels and place them skin-side down on the lined baking sheet, spaced evenly.
  4. If using vegetables, toss them with a bit of the lemon butter sauce and arrange around the salmon on the baking sheet.
  5. Brush the salmon generously with the lemon butter garlic sauce, coating the top and sides. Reserve some sauce for basting.
  6. Bake in the oven for 12-15 minutes until the salmon is cooked through and flakes easily with a fork.
  7. Halfway through baking, baste the salmon with the reserved sauce to keep it moist and flavorful.
  8. Remove from oven and sprinkle chopped fresh parsley on top.
  9. Serve immediately with lemon wedges on the side.

Notes

Pat salmon dry to ensure crispy skin. Do not overcrowd the pan to avoid steaming the fish. Baste halfway through cooking for extra moisture and flavor. Let salmon rest a few minutes before serving. For dairy-free, substitute butter with melted coconut oil. If using potatoes, give them a 5-minute head start in the oven before adding salmon.
