  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon unsalted butter, melted
  • 2 cups vanilla ice cream
  • Optional: fresh mint leaves or a squeeze of lime juice for garnish

Instructions

  1. Peel and core the pineapple, then slice into ½-inch thick rings or wedges.
  2. In a small bowl, combine 2 tablespoons granulated sugar with 1 teaspoon ground cinnamon and stir well.
  3. Preheat grill or grill pan to medium-high heat (about 375°F). If using a grill pan, heat on stove over medium for 5 minutes.
  4. Brush both sides of each pineapple slice with melted unsalted butter.
  5. Sprinkle cinnamon sugar mixture generously on one side of each buttered pineapple slice.
  6. Place pineapple slices sugar-side down on the grill. Grill for 3-4 minutes until grill marks appear and sugar caramelizes.
  7. Flip slices carefully with tongs, brush the other side with butter, sprinkle cinnamon sugar, and grill for another 3-4 minutes until tender but firm.
  8. Transfer grilled pineapple to serving plates and add a generous scoop of vanilla ice cream on the side or on top.
  9. Optional: garnish with fresh mint leaves or a squeeze of lime juice.

Use ripe, juicy pineapple for best caramelization. Brush pineapple with melted butter to help cinnamon sugar stick and prevent sticking. Manage grill heat to avoid burning sugar. Use tongs to flip slices gently. Serve immediately with ice cream for best contrast of warm and cold.
