  • ½ cup low-sodium soy sauce
  • 2 tablespoons fresh ginger, finely grated
  • 4 cloves garlic, minced
  • 3 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon gochugaru (Korean chili flakes)
  • 2 stalks green onions, thinly sliced
  • 1 tablespoon rice vinegar
  • ½ teaspoon freshly ground black pepper
  • Optional: 1 teaspoon toasted sesame seeds for garnish

Instructions

  1. Prepare the marinade by whisking together soy sauce, grated ginger, minced garlic, brown sugar, sesame oil, gochugaru, rice vinegar, and black pepper in a large mixing bowl.
  2. Place the beef short ribs in a large zip-top bag or shallow dish and pour the marinade over them, ensuring each piece is well coated. Seal and refrigerate for at least 3 hours, ideally overnight, flipping halfway through.
  3. Preheat your grill or grill pan over medium-high heat for about 10 minutes. Lightly oil the grill grate or pan to prevent sticking.
  4. Remove ribs from marinade, letting excess drip off. Grill ribs for 3-4 minutes per side until nicely charred and caramelized.
  5. Check for doneness aiming for an internal temperature of 145°F (63°C) for medium. Avoid overcooking to keep ribs tender.
  6. Transfer ribs to a plate and let rest for 5 minutes to redistribute juices.
  7. Garnish with sliced green onions and toasted sesame seeds if desired. Serve immediately with steamed rice or vegetables.

Notes

Marinate ribs overnight for best flavor and tenderness. Flip ribs halfway through marinating. Use tamari or coconut aminos for gluten-free version. If no grill available, use cast-iron skillet or broiler. Avoid over-flipping ribs to develop good char. Rest meat before serving to keep juicy.
