  • 1 cup packed light brown sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/4 cup bourbon
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves (optional)
  • Freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a small saucepan, melt the unsalted butter over medium heat.
  3. Add brown sugar, bourbon, Dijon mustard, apple cider vinegar, ground cinnamon, and ground cloves (if using). Stir constantly until the sugar dissolves and the glaze is smooth and bubbling, about 5 minutes. Remove from heat.
  4. Place the spiral ham on a rack in a roasting pan, cut side down.
  5. Brush a generous layer of glaze over the ham, making sure to get between the spiral slices.
  6. Cover loosely with aluminum foil.
  7. Bake the ham for about 1 hour, basting with more glaze every 15-20 minutes.
  8. Remove the foil during the last 15 minutes to allow the glaze to caramelize and form a sticky crust.
  9. Check the internal temperature with a meat thermometer; it should reach 140°F (60°C).
  10. Remove from oven and let rest for 10 minutes before slicing.

Notes

Use room temperature ham for even heating. Baste every 15-20 minutes to keep ham moist and build flavor layers. Avoid overbaking to prevent dryness. If glaze thickens too much, gently reheat and add a splash of bourbon or water to loosen. For non-alcoholic version, substitute bourbon with apple juice or vanilla extract. Cloves are optional and should be used sparingly to avoid overpowering the glaze.
