  • 3 tablespoons extra virgin olive oil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1/3 cup mint jelly (store-bought)
  • 1 teaspoon fresh lemon juice (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Allow at least 15 minutes for the oven to fully heat.
  2. In a small bowl, combine olive oil, chopped rosemary, thyme leaves, and minced garlic to make the herb marinade.
  3. Pat the lamb chops dry with paper towels to remove moisture. Season both sides generously with kosher salt and freshly ground black pepper.
  4. Rub the herb and oil mixture evenly over all sides of each chop. Let them sit at room temperature for 10-15 minutes.
  5. Heat an oven-safe skillet or cast iron pan over medium-high heat. Add the lamb chops and sear for 2-3 minutes per side until a deep golden crust forms.
  6. Transfer the skillet to the preheated oven and roast the chops for 6-8 minutes for medium-rare (internal temp around 135°F/57°C), or longer for desired doneness.
  7. While the chops roast, combine mint jelly and lemon juice in a small bowl. Warm gently in the microwave for 20-30 seconds to loosen.
  8. Remove the skillet from the oven and brush the mint jelly glaze generously over each chop. Return to the oven for 2 more minutes to set the glaze.
  9. Transfer the chops to a plate and tent loosely with foil. Rest for 5 minutes to allow juices to redistribute.
  10. Serve warm with any leftover glaze and your choice of sides.
