  • ½ cup honey (120 ml)
  • ½ cup brown sugar (light or dark, 100 g)
  • 2 tablespoons Dijon mustard (30 ml)
  • 1 teaspoon ground cloves (2 g)
  • 810 pineapple rings (fresh or canned, drained)
  • 1620 maraschino cherries
  • ¼ cup orange juice (60 ml, freshly squeezed if possible)
  • ½ teaspoon ground black pepper (1 g)
  • ¼ cup water (60 ml)
  • Optional: 1 tablespoon apple cider vinegar

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Remove the ham from packaging and pat dry with paper towels. Score the surface in a diamond pattern about ¼ inch deep.
  3. Place the ham on a rack in your roasting pan, flat side down.
  4. In a small saucepan over medium heat, combine honey, brown sugar, Dijon mustard, ground cloves, orange juice, water, and black pepper. Stir frequently until sugar dissolves and mixture thickens slightly, about 5-7 minutes.
  5. Brush a generous layer of glaze over the ham. Arrange pineapple rings on top, securing each ring with a maraschino cherry in the center using toothpicks if needed.
  6. Cover the ham loosely with foil and place it in the oven. Roast for about 1.5 hours, basting with glaze every 20-25 minutes.
  7. Remove the foil during the last 30 minutes to let the glaze caramelize and the pineapple roast slightly. Tent with foil if glaze darkens too quickly.
  8. Check the internal temperature with a meat thermometer; it should read 140°F (60°C).
  9. Remove the ham from the oven and let it rest tented with foil for 15-20 minutes.
  10. Slice and serve.

Notes

Score the ham to help the glaze soak in and create caramelized edges. Baste every 20-25 minutes with thin layers to avoid burning. Tent with foil during the last 30 minutes if glaze darkens too quickly. Let the ham rest before slicing to lock in juices. Warm glaze gently before basting if it thickens too much.
