Ingredients

Scale
  • 2 ½ cups (312g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • ½ cup (113g) unsalted butter, melted and slightly cooled
  • 2 large eggs, at room temperature
  • 1 cup (240ml) whole milk, at room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (170g) fresh or frozen cranberries
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • Zest of 1 orange
  • For the Crunchy Sugar Top:
  • ¼ cup (50g) granulated sugar
  • 2 tablespoons (28g) unsalted butter, melted

Instructions

  1. Preheat the oven to 425°F (220°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In another large bowl, whisk together the sugar and orange zest until fragrant. Whisk in the melted butter, eggs, milk, and vanilla until smooth.
  4. Pour the wet ingredients into the dry ingredients and fold gently with a rubber spatula until just combined (a few lumps are fine).
  5. Toss the cranberries with 1 tablespoon of flour, then fold them into the batter until evenly distributed.
  6. Divide the batter evenly among the muffin cups, filling each to the top (mounded slightly above the rim).
  7. Bake at 425°F for 5 minutes, then reduce the oven temperature to 375°F (190°C) without opening the door. Bake for 15-18 more minutes, until golden and a toothpick inserted in the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack.
  9. While still warm, brush the tops with the melted butter and immediately sprinkle with the granulated sugar.
  10. Cool completely on the wire rack before serving.

Notes

For best results, use room temperature eggs and milk. Do not overmix the batter. Toss cranberries in flour to prevent sinking. The initial high oven temperature is crucial for the dome. Brush with butter and add sugar while muffins are still warm for the crunchiest top. Store in an airtight container at room temperature with paper towels to absorb moisture. Reheat in a 300°F oven for 5-7 minutes to revive the crunch.
