Ingredients

Scale
  • 1 bottle (750 ml) Pinot Grigio or Sauvignon Blanc
  • 1 cup caramel vodka
  • 1/2 cup apple brandy or Calvados
  • 1/2 cup caramel sauce
  • 2 large Honeycrisp or Fuji apples
  • 1 large Bosc pear
  • 2 cinnamon sticks
  • 3 whole cloves
  • 1 star anise
  • 1 cup apple cider
  • 1/4 cup fresh lemon juice
  • Caramel sauce for drizzling
  • Fresh rosemary sprigs
  • Ice cubes (optional, apple cider ice cubes recommended)

Instructions

  1. Wash and dry the apples and pear. Cut into thin slices or small chunks (about 1/4 inch thick), removing cores and seeds. Place fruit in a large bowl and drizzle with fresh lemon juice, tossing gently to coat.
  2. Warm 1/2 cup caramel sauce in a small saucepan over low heat for about 30 seconds until pourable. Pour over the lemon-coated fruit and toss gently until every piece is glistening.
  3. Pour the entire bottle of white wine into a large pitcher. Add the caramel vodka and apple brandy. Stir gently with a wooden spoon to combine.
  4. Drop in the cinnamon sticks, whole cloves, and star anise. Pour in the apple cider. Stir gently again.
  5. Transfer the caramel-coated fruit into the pitcher, including any remaining caramel sauce from the bowl. Stir gently once more.
  6. Cover the pitcher and refrigerate for at least 2 hours, preferably 4 to 6 hours or overnight.
  7. About 30 minutes before serving, make apple cider ice cubes if desired. Drizzle extra caramel sauce around the rims of serving glasses.
  8. When ready to serve, give the sangria a final gentle stir. Fill each glass with apple cider ice cubes (or regular ice). Pour sangria over ice, ensuring each glass gets fruit pieces and a cinnamon stick. Garnish with a fresh rosemary sprig.

Notes

For best flavor, let the sangria chill for at least 4 hours or overnight. Use a dry white wine like Pinot Grigio or Sauvignon Blanc to balance the sweetness. Make apple cider ice cubes to avoid diluting the drink. The caramel-coated fruit can be made extra for garnish.
