This quick and easy monkey bread uses refrigerated cinnamon rolls for a fluffy, gooey, and crowd-pleasing breakfast or brunch treat. Ready in under 40 minutes, it’s perfect for impressing guests with minimal effort.

  • 2 cans (12.4 oz each) refrigerated cinnamon rolls (like Pillsbury Grands! or store brand, with icing packets)
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon (preferably Saigon cinnamon)
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/4 cup packed brown sugar
  • Optional: 1/2 cup chopped pecans or walnuts
  • Optional: 1/4 cup raisins

Instructions

  1. Preheat oven to 350°F (175°C). Generously grease a 10-12 cup Bundt pan with butter or non-stick spray.
  2. Open the cinnamon rolls, separate each roll, and set the icing packets aside. Cut each cinnamon roll into quarters (about 64 pieces total).
  3. In a small bowl, mix granulated sugar and cinnamon. In another small bowl, combine melted butter and brown sugar until smooth.
  4. Place cinnamon roll pieces in a large bowl. Pour cinnamon-sugar mixture over them and toss gently to coat evenly.
  5. Arrange half of the coated pieces in the prepared Bundt pan. Drizzle with half of the butter-brown sugar mixture. If using nuts or raisins, sprinkle half over this layer. Repeat with remaining pieces, butter mixture, and add-ins.
  6. Place pan on a baking sheet. Bake for 25-30 minutes, until top is deep golden brown and a toothpick inserted in center comes out clean. Caramel should be bubbling around edges.
  7. Cool in pan on a cooling rack for exactly 5 minutes. Do not skip this step.
  8. Place serving plate upside down over pan. Carefully invert and lift off pan. If any pieces stick, scrape them off and press back onto bread. Cool 2-3 minutes, then drizzle reserved icing packets over top.
  9. Serve warm, within 30 minutes of baking, pulling apart pieces to serve.

Notes

For best results, use soft, fluffy cinnamon rolls (not flaky style). Grease pan generously to prevent sticking. Let cool exactly 5 minutes before flipping. Use the included icing packets for convenience. For a dairy-free version, use coconut oil or plant-based butter and dairy-free cinnamon rolls. For a nut-free version, omit optional nuts.
