Best Easy Sheet Pan Pork Chops with Roasted Vegetables

A quick and delicious weeknight dinner featuring juicy bone-in pork chops and caramelized roasted vegetables, all cooked on a single sheet pan for easy cleanup.

  • 4 bone-in pork chops, about 1-inch thick
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • 2 medium potatoes, cut into 1-inch cubes
  • 2 medium carrots, peeled and cut into chunks
  • 1 medium red onion, cut into wedges
  • 1 medium zucchini, cut into half-moons
  • 1 bell pepper, any color, cut into chunks
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F (220°C). Place the oven rack in the middle position.
  2. Wash and chop potatoes, carrots, onion, zucchini, and bell pepper into uniform 1-inch pieces.
  3. In a large mixing bowl, toss the chopped vegetables with 2 tablespoons olive oil, dried rosemary, ½ teaspoon salt, and ½ teaspoon black pepper. Spread in a single layer on a baking sheet, leaving space in the middle for the pork chops.
  4. Roast the vegetables for 10 minutes.
  5. While vegetables roast, pat pork chops dry with paper towels. In a medium bowl, combine 2 tablespoons olive oil, garlic powder, smoked paprika, dried thyme, ½ teaspoon salt, ½ teaspoon black pepper, and cayenne (if using). Rub mixture all over both sides of the pork chops.
  6. After 10 minutes, remove the baking sheet from the oven. Push vegetables to the sides and place seasoned pork chops in the center.
  7. Return to the oven and roast for 15-18 minutes, until pork chops reach an internal temperature of 145°F (63°C) and vegetables are tender and lightly browned.
  8. Remove from oven and let pork chops rest for 5 minutes before serving.

Notes

Pat pork chops dry before seasoning for better crust. Start vegetables first to ensure even cooking. Use a meat thermometer for perfectly cooked pork. Let pork chops rest 5 minutes before serving.
