  • 2 tablespoons olive oil
  • 2 cups shredded mozzarella cheese (low-moisture, part-skim)
  • 1 cup shredded cheddar cheese (sharp)
  • 1/2 cup grated Parmesan cheese
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, melted
  • 3 cloves garlic, minced (or 1 teaspoon garlic powder)
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • 1 tablespoon sesame seeds
  • 1 tablespoon poppy seeds (optional)

Instructions

  1. Thaw frozen bread dough according to package directions. Place in a lightly oiled bowl, cover with plastic wrap, and let rise in a warm place for about 30 minutes, or until doubled in size.
  2. In a medium bowl, combine shredded mozzarella, cheddar, Parmesan, and softened cream cheese. Mix until well incorporated.
  3. On a lightly floured surface, roll dough into a 12×16 inch rectangle. Spread cheese mixture evenly over dough, leaving a 1-inch border.
  4. Starting from the long side, roll dough tightly like a jelly roll. Pinch seam to seal. Cut into 12 equal slices, about 1.5 inches thick.
  5. Arrange slices cut-side up on a parchment-lined baking sheet in a football shape, slightly overlapping. Cover loosely with plastic wrap and let rise for 20-30 minutes until puffy.
  6. Preheat oven to 375°F (190°C). Whisk egg with 1 tablespoon water to make egg wash.
  7. Brush risen bread gently with egg wash. Bake for 25-30 minutes until deep golden brown and cheese is bubbly. Tent with foil if browning too quickly.
  8. While bread bakes, mix melted butter, minced garlic, parsley, salt, and pepper. Brush over bread as soon as it comes out of the oven.
  9. Sprinkle sesame seeds in a line down the center for football laces, and poppy seeds on either side. Let cool for 5 minutes before serving.

Notes

For best results, use block cheese and shred it yourself. Make sure cream cheese is softened to room temperature. You can assemble the bread up to the second rise, then refrigerate overnight. Let it come to room temperature for 30 minutes before baking. Leftovers can be stored wrapped in foil at room temperature for up to 2 days; reheat in a 350°F oven for 10 minutes.
