Ingredients

Scale
  • 1 bone-in, skin-on turkey breast (5–6 pounds)
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper, freshly ground
  • 2 cloves garlic, minced
  • 1/2 cup pure maple syrup
  • 1/4 cup bourbon
  • 2 tablespoons unsalted butter
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 4 sprigs fresh rosemary
  • 6 sprigs fresh thyme
  • 3 sprigs fresh sage (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Take the turkey breast out of the fridge about 30 minutes before starting. Pat it completely dry with paper towels.
  2. In a small bowl, mix the softened butter, minced garlic, salt, and pepper until it forms a paste.
  3. Gently loosen the skin over the breast meat with your fingers and spread about half the butter mixture directly under the skin. Rub the rest all over the outside. Place the herb sprigs under the skin and in the cavity if there is one.
  4. Combine the maple syrup, bourbon, 2 tablespoons butter, Dijon mustard, and apple cider vinegar in a small saucepan. Bring to a simmer over medium heat, stirring occasionally. Let it bubble gently for about 5-7 minutes until it thickens slightly. Remove from heat and set aside.
  5. Preheat your oven to 400°F (200°C). Place the turkey breast on the rack in your roasting pan, breast side up. Roast for 30 minutes without touching it.
  6. After 30 minutes, reduce the oven temperature to 350°F (175°C). Start basting the turkey with the glaze every 15-20 minutes. Use a brush to coat the skin evenly.
  7. After about 1 hour of total cooking time, start checking the internal temperature. Insert your meat thermometer into the thickest part of the breast, avoiding the bone. You’re looking for 160°F (71°C). If the skin is browning too quickly, tent loosely with foil.
  8. Once the turkey hits 160°F, remove it from the oven and transfer it to a cutting board. Let it rest for at least 15 minutes.
  9. Slice against the grain and arrange on a platter with fresh herbs for garnish. Drizzle any leftover glaze over the top.

Notes

Don’t skip the drying step for crispy skin. Watch your oven temperature to prevent the glaze from burning. Baste gently with light, even strokes. Let the turkey rest for at least 15 minutes before slicing. If making for a big gathering, consider doubling the glaze recipe.
