  • 1 teaspoon kosher salt

  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon smoked paprika
  • 1/2 cup ketchup
  • 1/4 cup packed brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Line your loaf pan with parchment paper or spray with non-stick cooking spray.
  2. In a large mixing bowl, combine 1 cup breadcrumbs and 1/2 cup milk. Stir and let sit for 5 minutes.
  3. While breadcrumbs soak, heat a small skillet over medium heat with a drizzle of olive oil. Add diced onion and cook for 4-5 minutes until soft. Add minced garlic and cook for 30 seconds. Let cool.
  4. To the soaked breadcrumbs, add ground beef, cooled onions and garlic, beaten eggs, Worcestershire sauce, salt, pepper, thyme, and smoked paprika.
  5. Mix gently with your hands just until combined (about 60 seconds). Do not overmix.
  6. Transfer meat mixture to prepared loaf pan. Gently press into an even shape, avoiding air pockets.
  7. In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, yellow mustard, and garlic powder until smooth.
  8. Spoon about half of the glaze over the meatloaf and spread evenly.
  9. Bake for 45 minutes on the middle rack.
  10. After 45 minutes, remove from oven and spread remaining glaze over the top.
  11. Return to oven and bake for another 15-20 minutes, until internal temperature reaches 160ยฐF (71ยฐC).
  12. Let meatloaf rest in the pan for 10 minutes before slicing.
  13. Transfer to a cutting board, slice into 1-inch thick pieces, and serve.
