Ingredients

Scale
  • 4 cups cranberry juice (100% juice)
  • 2 cups pomegranate juice
  • 1 cup fresh orange juice (about 3–4 oranges)
  • 1/2 cup fresh lime juice (about 4–5 limes)
  • 1/2 cup honey or simple syrup
  • 4 cups chilled seltzer water or ginger ale
  • 1 bottle chilled prosecco or sparkling wine (optional)
  • Fresh cranberries (for garnish)
  • Pomegranate arils (seeds from 1 pomegranate)
  • Orange slices (thin rounds, halved or quartered)
  • Lime slices (thin rounds)
  • Fresh rosemary sprigs (optional)
  • Ice ring or large ice cubes (made from cranberry juice or water)

Instructions

  1. Make the ice ring at least 4 hours ahead or the night before: Fill a bundt pan or ring mold halfway with water or cranberry juice. Arrange fresh cranberries, pomegranate arils, and a few thin orange slices in the liquid. Freeze for 2 hours, then add more liquid to fill the mold completely and freeze until solid.
  2. Juice the citrus: Roll oranges and limes on the counter before cutting. Cut them in half and juice. You’ll need about 3-4 oranges and 4-5 limes. Strain if desired.
  3. Mix the base: In a punch bowl or large pitcher, combine cranberry juice, pomegranate juice, fresh orange juice, and fresh lime juice. Stir in honey or simple syrup until dissolved. Taste and adjust sweetness.
  4. Chill the base: Cover and refrigerate for at least 1 hour, up to 24 hours. The flavors meld and deepen overnight.
  5. Add the sparkle right before serving: Pour in chilled seltzer (and prosecco if using) and stir gently to combine.
  6. Add the ice ring and garnish immediately before serving: Unmold the ice ring by running the outside under warm water for about 30 seconds. Place it gently into the punch bowl. Add extra fresh cranberries, pomegranate arils, citrus slices, and rosemary sprigs.
  7. Serve and enjoy: Ladle into glasses, making sure each serving gets a few floating berries and a citrus slice. Garnish each glass with a small rosemary sprig and a few pomegranate arils if desired.

Notes

Make the ice ring the night before. Chill all ingredients overnight. Do not add seltzer or prosecco until right before serving to keep the punch bubbly. The base can be made up to 24 hours in advance and actually tastes better after chilling. For a non-alcoholic version, skip the prosecco and double the seltzer. For a low-sugar version, use unsweetened cranberry juice and skip the honey.
