A quick and easy fall snack made with Chex cereal, pretzels, nuts, and a maple-spice coating. Perfectly balanced sweet and salty, this crowd-pleasing mix comes together in under 30 minutes.

  • 3 cups Rice Chex cereal
  • 3 cups Corn Chex cereal
  • 2 cups mini pretzels
  • 1 cup raw pecans, halved or roughly chopped
  • 1 cup raw almonds, whole or slivered
  • 1/2 cup raw pumpkin seeds (pepitas)
  • 1/4 cup pure maple syrup
  • 3 tablespoons coconut oil, melted
  • 2 tablespoons packed brown sugar (light or dark)
  • 1 teaspoon pure vanilla extract
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt (flaky sea salt preferred for finishing)
  • 1/2 cup dried cranberries
  • 1/4 cup dried apple chips, broken into bite-sized pieces (optional)
  • Extra flaky sea salt for sprinkling

Instructions

  1. Preheat your oven to 300°F (150°C). Line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, combine Rice Chex, Corn Chex, mini pretzels, pecans, almonds, and pumpkin seeds. Toss gently with your hands to distribute evenly.
  3. In a small saucepan over low heat (or microwave-safe bowl in 20-second bursts), melt the coconut oil. Whisk in maple syrup, brown sugar, vanilla extract, pumpkin pie spice, and salt until smooth and sugar is mostly dissolved. Do not boil.
  4. Drizzle the warm coating over the dry mix. Use a spatula to gently fold until every piece is lightly coated, about 2-3 minutes.
  5. Spread the coated mix in an even single layer on the prepared baking sheet.
  6. Bake for 20 minutes, stirring gently halfway through (after 10 minutes).
  7. As soon as the mix comes out of the oven, sprinkle dried cranberries and dried apple chips (if using) over the top. Stir gently to combine.
  8. While still warm, sprinkle a generous pinch of flaky sea salt over the top.
  9. Cool completely on the baking sheet for at least 30 minutes without stirring.
  10. Once cool, break any large clusters into bite-sized pieces. Transfer to an airtight container or serve immediately.

Notes

For best crunch, let the mix cool completely before storing. Store in an airtight container at room temperature for up to 2 weeks. Freezes well for up to 3 months. If mix loses crunch, reheat at 300°F for 5 minutes and cool before serving.
