  • ⅓ cup (75g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon (optional)
  • ¾ cup (130g) semi-sweet chocolate chips
  • 1 tablespoon turbinado sugar (for topping, optional)
  • Extra chocolate chips (for topping, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Line your 9×5-inch loaf pan with parchment paper, leaving some overhang on the long sides. Lightly grease the paper with butter or non-stick spray.
  2. In a large mixing bowl, mash the bananas with a fork until mostly smooth but still with a few small chunks.
  3. In a small microwave-safe bowl, melt the butter in 20-second bursts until just melted. Let it cool for 2 minutes.
  4. Add the melted butter, sugar, egg, and vanilla extract to the mashed bananas. Whisk until smooth and well combined.
  5. In a separate medium bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
  6. Pour the flour mixture over the banana mixture. Use a rubber spatula to fold gently until just combined—do not overmix.
  7. Fold in the chocolate chips with just 3 or 4 strokes. Reserve about 2 tablespoons of chips for topping.
  8. Pour the batter into the prepared pan. Spread evenly. Tap the pan gently on the counter 2-3 times to release air bubbles. Sprinkle reserved chocolate chips and turbinado sugar on top.
  9. Bake for 55-65 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil after 40 minutes.
  10. Remove from oven and place on a cooling rack. Cool in the pan for 15 minutes, then lift out using parchment handles and cool completely on the rack (at least 1 hour) before slicing.

Notes

Don’t overmix the batter. Use bananas that are almost black for best sweetness and moisture. Measure flour correctly by spooning and leveling. Let the bread cool completely before slicing to avoid crumbling. Room temperature ingredients ensure better emulsification. Check doneness with a toothpick.
