These creamy, comforting overnight oats are made with just five simple ingredients and come together in five minutes. They taste like a warm hug on a cold morning and are perfect for busy fall mornings.

  • ½ cup (40g) rolled oats (old-fashioned oats)
  • ¾ cup (180ml) unsweetened almond milk (or any milk)
  • ¼ cup (60g) pumpkin puree (100% pure, not pumpkin pie filling)
  • ¼ cup (60g) plain Greek yogurt
  • 1 teaspoon pumpkin pie spice
  • Optional: maple syrup or honey, to taste
  • Optional: 1 tablespoon chia seeds
  • Optional: pinch of salt

Instructions

  1. Grab a 16-ounce mason jar or airtight container.
  2. Add ½ cup rolled oats to the jar.
  3. Spoon in ¼ cup pumpkin puree.
  4. Add ¼ cup plain Greek yogurt.
  5. Sprinkle in 1 teaspoon pumpkin pie spice.
  6. Pour in ¾ cup unsweetened almond milk.
  7. Stir vigorously with a spoon or small whisk until the pumpkin puree is fully incorporated and the mixture is smooth and uniform in color.
  8. Seal the jar tightly.
  9. Optional: Shake the jar for 10 seconds to distribute ingredients evenly.
  10. Refrigerate for at least 6 hours, preferably 8 to 12 hours.
  11. Enjoy cold, or microwave (without lid) for 60 to 90 seconds for warm oats. Stir before serving.

Notes

For a thicker texture, let the oats sit for 12-14 hours. If too thick in the morning, stir in an extra tablespoon of milk. If too thin, add a spoonful of yogurt or chia seeds. The flavor improves after 24 hours. Store in the refrigerator for up to 5 days. Do not freeze.
