A happy accident turned into a fall favorite! These air fryer cinnamon sugar pumpkin seeds are perfectly crunchy, sweet, and ready in just 15 minutes. Made with simple ingredients, they’re the ultimate cozy snack for autumn.

Ingredients

Scale
  • 1 cup fresh pumpkin seeds (rinsed and patted dry)
  • 1 tablespoon melted coconut oil (or avocado oil)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ⅛ teaspoon nutmeg (optional)

Instructions

  1. Preheat your air fryer to 320°F (160°C).
  2. Rinse and dry the pumpkin seeds thoroughly. Spread them on a clean kitchen towel and pat completely dry.
  3. In a medium mixing bowl, combine the melted coconut oil, granulated sugar, cinnamon, salt, and nutmeg if using. Whisk until the sugar starts to dissolve slightly, forming a thick paste.
  4. Add the dried pumpkin seeds to the bowl and toss until every seed is coated evenly.
  5. Spread the coated seeds in a single layer in the air fryer basket. Do not overcrowd.
  6. Air fry at 320°F (160°C) for 6 minutes.
  7. After 6 minutes, open the air fryer and shake the basket or stir the seeds with a spatula.
  8. Air fry for another 3-6 minutes, checking at the 3-minute mark, until golden brown and toasty (total cook time 9-12 minutes).
  9. Remove the basket and let the seeds cool completely in the basket or on a baking sheet (at least 10-15 minutes). They will continue to crisp up as they cool.
  10. Transfer to a bowl and enjoy, or store in an airtight container.

Notes

Dry seeds thoroughly for best crunch. Do not overcrowd the air fryer. Let seeds cool completely before eating for maximum crunch. Store in an airtight container at room temperature for up to 2 weeks. To refresh, air fry at 300°F for 2-3 minutes.
