  • 1 teaspoon ground cinnamon
  • 1 tablespoon honey or maple syrup
  • 1 small plate or shallow dish (for dipping)
  • ½ cup (120 ml) chilled apple cider
  • ½ cup (120 ml) chilled champagne or prosecco
  • Ice cubes (optional)
  • Optional garnish: 1 thin apple slice, 1 small cinnamon stick, or a sprig of fresh rosemary

Instructions

  1. Prepare the cinnamon sugar mixture: In a small bowl, combine 2 tablespoons granulated sugar and 1 teaspoon ground cinnamon. Mix well with a fork until the cinnamon is evenly distributed. Set aside.
  2. Prepare the rim adhesive: Pour 1 tablespoon honey or maple syrup onto a small plate. Spread it into an even layer about the size of your glass rim.
  3. Dip the glass rims: Take your champagne flute and carefully dip the rim into the honey, rotating gently to coat the entire edge. Let any excess drip off. Then, dip the rim into the cinnamon sugar mixture, rotating to coat evenly. Tap off any loose sugar. Repeat for the second glass. Let them sit for 30 seconds to set.
  4. Chill the glasses (optional but recommended): Place the rimmed glasses in the freezer for 5 minutes.
  5. Add the apple cider: Remove the glasses from the freezer. Pour ½ cup (120 ml) chilled apple cider into each glass. Fill about halfway. If using ice, add a couple of cubes now.
  6. Top with champagne: Slowly pour ½ cup (120 ml) chilled champagne or prosecco into each glass, pouring at an angle to preserve the bubbles. Fill to about an inch from the rim.
  7. Garnish and serve: Add your chosen garnish—a thin apple slice, a cinnamon stick, or a sprig of rosemary. Serve immediately.

Notes

For the best texture, use a fine-grain sugar for the rim. Chill all ingredients and glasses before serving. Use a dry brut champagne to balance sweetness. Rim the glasses no more than 10 minutes before serving. For a non-alcoholic version, swap champagne with sparkling apple cider or sparkling water.
