Ingredients

Scale
  • 1 whole chicken (3–4 pounds)
  • 3 large carrots, peeled and diced
  • 3 celery stalks, diced
  • 1 large yellow onion, diced
  • 4 garlic cloves, minced
  • 8 cups low-sodium chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 4 tablespoons cold unsalted butter, cut into small cubes
  • 3/4 cup cold buttermilk
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Place the whole chicken in a large Dutch oven. Add diced carrots, celery, and onion. Tuck in bay leaves and sprinkle dried thyme. Pour in 8 cups chicken broth. Bring to a gentle boil over medium-high heat, then reduce heat to low, cover, and simmer for 45 minutes to 1 hour, until chicken is cooked through and tender (internal temperature 165°F).
  2. Carefully transfer cooked chicken to a cutting board. Use two forks to shred the meat, discarding skin and bones. Leave broth and vegetables simmering on low heat. Optionally, mash some vegetables with a potato masher for a thicker broth.
  3. In a medium bowl, whisk together 2 cups flour, 1 tablespoon baking powder, 1/2 teaspoon baking soda, and 1 teaspoon salt. Add cold cubed butter and cut in with a pastry cutter or fingertips until mixture resembles coarse crumbs with pea-sized butter pieces. Make a well, pour in 3/4 cup cold buttermilk, and stir gently with a fork until just combined. Do not overmix.
  4. Return shredded chicken to the pot. Stir to combine. Taste broth and adjust seasoning with salt and black pepper.
  5. Bring broth to a gentle simmer. Using two spoons, drop spoonfuls of dumpling dough onto the surface of the broth (do not submerge). Cover pot immediately with a tight-fitting lid. Do not lift the lid for 15-18 minutes.
  6. After 18 minutes, remove lid. Dumplings should be puffy and doubled in size. Gently stir to break up any stuck dumplings. Ladle into bowls, ensuring each serving has broth, chicken, vegetables, and dumplings. Garnish with fresh parsley. Serve hot.

Notes

Keep butter cold for fluffy dumplings. Do not overmix dumpling dough. Do not lift lid while dumplings are steaming. For a thicker broth, mash some cooked vegetables before adding dumplings. Leftovers can be stored in the refrigerator for up to 4 days; reheat gently on stovetop with a splash of broth.
