  • 1 cup (200g) brown sugar, packed
  • 1/2 cup (100g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/4 cup (60ml) apple cider concentrate, thawed
  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 cup (50g) granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, beat softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes on medium speed.
  3. Beat in egg, vanilla extract, and thawed apple cider concentrate until well combined.
  4. In a separate medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  5. Gradually add dry ingredients to wet mixture, mixing on low speed or folding with a spatula until just combined. Do not overmix.
  6. In a small bowl, stir together 1/4 cup granulated sugar and 1 tablespoon cinnamon for the coating.
  7. Using a 1.5 tablespoon cookie scoop, portion dough and roll each ball in the cinnamon sugar mixture to coat completely. Place on prepared baking sheets, spacing 2 inches apart.
  8. Bake one sheet at a time for 10-12 minutes, until edges are set and lightly golden but centers still look slightly soft and underdone.
  9. Let cookies rest on baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely.

Notes

If using regular apple cider instead of concentrate, reduce 1 cup of cider to about 3 tablespoons on the stove, then cool completely before adding. For best results, use room temperature ingredients and bake one sheet at a time. Cookies can be stored in an airtight container at room temperature for up to 5 days or frozen for up to 3 months.
