  • 1 cup (240ml) milk (any kind)
  • 3 tablespoons (48g) creamy peanut butter
  • 1 medium ripe banana, mashed (about 100g)
  • 12 tablespoons (15-30ml) maple syrup
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of fine sea salt
  • Optional toppings: sliced banana, drizzle of peanut butter, sprinkle of cinnamon, chopped peanuts, dark chocolate chips

Instructions

  1. Mash the banana in a small bowl with a fork until mostly smooth (a few lumps are fine).
  2. In a mason jar or airtight container, combine milk, mashed banana, peanut butter, maple syrup, and vanilla extract. Stir until peanut butter is mostly incorporated.
  3. Add rolled oats, chia seeds, and a pinch of salt. Stir well, scraping the bottom to ensure everything is combined.
  4. Check consistency: the mixture should look a little thin; it will thicken overnight. Add a splash more milk if needed.
  5. Seal the jar and refrigerate for at least 6 hours, preferably overnight.
  6. In the morning, stir the oats well to redistribute any settled chia seeds. If too thick, stir in a tablespoon or two of milk.
  7. Add desired toppings and enjoy cold or microwave for 30-45 seconds for warm oats.

Notes

For best texture, use ripe bananas with brown spots. Don’t skip the pinch of salt—it enhances the peanut butter flavor. Stir the peanut butter into the milk first to avoid clumps. Oats are best within 2-3 days.
