This isn’t your grandmother’s green bean casserole—though she’d approve. This cozy crispy green bean casserole with fried shallots takes everything you love about the classic and makes it better with a homemade cream sauce and irresistible crunchy topping.

Ingredients

Scale
  • 1.5 pounds (680g) fresh green beans, trimmed and cut into 2-inch pieces
  • 3 tablespoons (42g) unsalted butter
  • 8 ounces (225g) cremini mushrooms, sliced
  • 1 medium yellow onion, finely diced
  • 3 garlic cloves, minced
  • 3 tablespoons (24g) all-purpose flour
  • 1.5 cups (360ml) whole milk
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (120ml) low-sodium chicken or vegetable broth
  • 1 teaspoon (5g) salt, plus more to taste
  • 1/2 teaspoon (1g) freshly ground black pepper
  • 1/4 teaspoon (0.5g) ground nutmeg
  • 1 teaspoon (1g) fresh thyme, chopped (or 1/2 teaspoon dried)
  • 4 large shallots (about 6 ounces/170g), thinly sliced into rings
  • 1/2 cup (60g) all-purpose flour (for dredging shallots)
  • 1/2 teaspoon (2g) salt (for seasoning shallot flour)
  • 1 cup (240ml) vegetable or canola oil (for frying)
  • 1/2 cup (30g) panko breadcrumbs
  • 2 tablespoons (8g) fresh parsley, chopped (for garnish)

Instructions

  1. Blanch the green beans: Bring a large pot of salted water to a rolling boil. Add the trimmed green beans and cook for 3 minutes until bright green and slightly tender but still crisp. Drain immediately and transfer to a bowl of ice water for 2 minutes. Drain well and set aside.
  2. Fry the shallots: While beans blanch, heat 1 cup vegetable oil in a small saucepan over medium heat. Toss sliced shallots with 1/2 cup flour and 1/2 teaspoon salt until evenly coated. Shake off excess flour. Fry shallots in batches for 2-3 minutes until golden brown, stirring occasionally. Transfer to a paper towel-lined plate with a slotted spoon. Season with a pinch of salt while warm. Set aside half for topping and half for mixing into casserole.
  3. Make the cream sauce: In a large skillet, melt 3 tablespoons butter over medium heat. Add sliced cremini mushrooms and cook 5-6 minutes until they release liquid and start to brown. Add diced onion and cook 3 minutes until softened. Stir in minced garlic and cook 30 seconds until fragrant. Sprinkle 3 tablespoons flour over the mixture and stir constantly for 1 minute. Slowly pour in milk, heavy cream, and broth while whisking continuously. Bring to a gentle simmer and cook 3-4 minutes until sauc…
  4. Assemble the casserole: Preheat oven to 375°F (190°C). In a large mixing bowl, combine blanched green beans with cream sauce and half of the fried shallots. Gently fold until beans are evenly coated. Transfer to a greased 9×13-inch baking dish and spread into an even layer. Sprinkle panko breadcrumbs over the top, followed by the remaining fried shallots.
  5. Bake: Place casserole in preheated oven and bake for 20-25 minutes until bubbly around edges and golden on top. For extra browning, switch to broil for the last 1-2 minutes, watching closely. Let casserole rest for 5 minutes before serving. Garnish with fresh parsley.

Notes

Don’t skip blanching the green beans—it sets color and texture while removing excess moisture. Keep shallot slices uniform for even frying. Watch oil temperature (around 325°F/163°C) to avoid greasy or burnt shallots. The cream sauce can be made up to 2 days ahead and refrigerated. For gluten-free, use gluten-free all-purpose flour and panko. For dairy-free, use vegan butter, oat milk, and coconut cream. The casserole can be assembled (without topping) up to 24 hours in advance. Leftovers keep in the refrigerator for up to 4 days. Reheat in a 350°F oven for 10-15 minutes for best results.
