  • 1 lb Ground Beef (80/20 preferred)
  • 1 Medium Yellow Onion, diced
  • 8 oz Cremini Mushrooms, sliced
  • 3 Cloves Garlic, minced
  • 2 cups Beef Broth (low-sodium)
  • 1 can (10.5 oz) Cream of Mushroom Soup
  • 2 tablespoons Worcestershire Sauce
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Dried Thyme
  • ½ teaspoon Paprika (sweet or smoked)
  • Salt and Black Pepper, to taste
  • 1 cup Sour Cream, at room temperature
  • 12 oz Egg Noodles
  • Fresh Parsley, chopped (for garnish)

Instructions

  1. Brown the Beef (10 minutes): Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until no longer pink. Leave about 1 tablespoon of fat in the pan.
  2. Sauté the Aromatics (5 minutes): Add the diced onion and sliced mushrooms to the skillet with the beef. Cook for 4-5 minutes, stirring occasionally, until mushrooms have released their liquid and started to brown, and onion is translucent. Add minced garlic and cook for 30 seconds until fragrant.
  3. Build the Base (2 minutes): Transfer the beef and mushroom mixture to a 6-quart or larger slow cooker. Sprinkle dried thyme and paprika over the top. Pour in beef broth, cream of mushroom soup, Worcestershire sauce, and Dijon mustard. Stir well to combine.
  4. Slow Cook the Magic (4-6 hours on LOW or 2-3 hours on HIGH): Put the lid on the slow cooker. Cook on LOW for 4-6 hours or on HIGH for 2-3 hours. The sauce will be thin at this point.
  5. Cook the Noodles (10 minutes): About 15 minutes before serving, bring a large pot of salted water to a boil. Cook egg noodles according to package directions until al dente. Drain and set aside.
  6. Finish the Sauce (5 minutes): Turn slow cooker to ‘Warm’ or off. Spoon about ½ cup of hot broth from the slow cooker into the sour cream and whisk together (tempering). Pour the tempered sour cream mixture back into the slow cooker and stir gently until creamy and pink. Taste and adjust salt and pepper.
  7. Serve Immediately: Place a generous pile of egg noodles in a bowl. Ladle the creamy stroganoff over the top. Garnish with fresh parsley and an extra crack of black pepper.

Notes

Don’t skip browning the beef for deep flavor (Maillard reaction). Temper the sour cream to prevent curdling. Use full-fat ingredients for the richest sauce. Store sauce and noodles separately to avoid mushy leftovers. For a thicker sauce, make a cornstarch slurry (1 tbsp cornstarch + 2 tbsp cold water) and stir in 30 minutes before serving.
