A hearty, comforting taco soup made in the crockpot with ground beef, beans, corn, and a secret ingredientโ€”ranch seasoning. This easy 1-pot dinner is perfect for busy weeknights and tastes even better the next day.

Ingredients

Scale
  • 1 lb ground beef (80/20)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 packet (1 oz) ranch seasoning mix
  • 1 packet (1 oz) taco seasoning mix
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 2 cups beef broth, low-sodium
  • 1 can (4 oz) diced green chiles (optional)
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 teaspoon onion powder (optional)
  • Salt and black pepper to taste
  • Sour cream or Greek yogurt (for serving)
  • Shredded cheddar cheese (for serving)
  • Tortilla chips or strips (for serving)
  • Fresh cilantro, chopped (for serving)
  • Lime wedges (for serving)

Instructions

  1. Brown the ground beef: Heat a large skillet over medium-high heat. Add the ground beef and diced onion. Cook for 6-8 minutes, breaking up the meat, until the beef is no longer pink and the onion is translucent. Drain excess fat, leaving about 1 tablespoon for flavor. Add minced garlic and cook for 30 seconds until fragrant.
  2. Transfer the beef and onion mixture to a 5-6 quart crockpot.
  3. Sprinkle the ranch seasoning and taco seasoning over the beef. Stir to coat the meat evenly.
  4. Add the diced tomatoes (undrained), tomato sauce, black beans, kidney beans, and corn. Stir until well combined.
  5. Pour in the beef broth and stir again. For a thinner soup, add an extra 1/2 cup broth.
  6. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. For best flavor, cook on low for 8 hours.
  7. About 30 minutes before serving, taste the broth and adjust seasoning with salt, pepper, or a pinch of cumin if needed.
  8. Serve hot, ladled into bowls. Top with sour cream, shredded cheddar cheese, crushed tortilla chips, fresh cilantro, and a squeeze of lime juice.

Notes

For best flavor, use fire-roasted diced tomatoes. The soup tastes even better the next day. Do not add sour cream to the whole pot as it may curdle; top individual bowls instead. For a vegetarian version, omit beef and add an extra can of beans with vegetable broth. For a spicier version, add diced jalapeรฑo or cayenne pepper.
