  • ¼ cup light brown sugar, packed

  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 cup old-fashioned rolled oats
  • ½ cup all-purpose flour
  • ½ cup light brown sugar, packed
  • ½ cup chopped pecans
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 6 tablespoons unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, combine sliced apples, granulated sugar, brown sugar, lemon juice, flour, cinnamon, nutmeg, and salt. Toss until apples are evenly coated. Let sit for 10 minutes.
  3. In a medium bowl, whisk together oats, flour, brown sugar, chopped pecans, cinnamon, and salt. Add cold butter cubes. Using a pastry cutter, two forks, or your fingertips, cut butter into dry ingredients until mixture resembles coarse meal with some pea-sized butter pieces.
  4. Pour apple mixture into prepared baking dish and spread evenly. Sprinkle oat pecan topping evenly over apples. Do not press down.
  5. Place dish on a baking sheet. Bake for 40–45 minutes, until filling is bubbly around edges and topping is deep golden brown. If topping browns too quickly after 30 minutes, tent loosely with foil.
  6. Let cool on a wire rack for at least 15 minutes before serving.

Notes

Slice apples evenly for even cooking. Keep butter cold for a crisp topping. Let crisp rest after baking to allow filling to thicken. Use a glass or ceramic dish if possible. Always place dish on a baking sheet to catch drips.
