A quick and easy chicken noodle soup that delivers deep, savory flavor in just 30 minutes, thanks to a secret parmesan rind trick. Perfect for cozy nights and busy weeknights.

Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, diced (about 1.5 cups)
  • 3 medium carrots, peeled and sliced into rounds
  • 3 celery stalks, sliced
  • 4 cloves garlic, minced
  • 1.5 pounds bone-in, skin-on chicken thighs
  • 8 cups low-sodium chicken broth
  • 2 cups water
  • 1 parmesan rind
  • 2 fresh bay leaves
  • 3 sprigs fresh thyme
  • 1 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 6 ounces wide egg noodles
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon juice
  • 1/4 cup heavy cream (optional)

Instructions

  1. Start the Aromatics (3 minutes): Place your Dutch oven over medium heat and add the butter. Let it melt until it’s foamy but not browning. Add the diced onion, sliced carrots, and celery. Cook, stirring occasionally with your wooden spoon, for about 3 minutes. The onions should become translucent and the kitchen will start smelling incredible. Don’t rush this stepโ€”it’s the flavor foundation.
  2. Bloom the Garlic (1 minute): Add the minced garlic to the pot. Stir constantly for about 30 seconds to 1 minute. You want it fragrant, not burnt. If it starts to brown too fast, lower the heat slightly. Garlic can turn bitter quickly, so keep an eye on it.
  3. Brown the Chicken (5-6 minutes): Push the vegetables to the sides of the pot. Place the chicken thighs skin-side down in the center. Let them cook undisturbed for 3-4 minutes until the skin is golden and crispy. Flip them with your tongs and cook for another 2 minutes on the other side. The browning adds a deep, roasted flavor to the broth that you just can’t get from boiling.
  4. Build the Broth (15 minutes): Pour in the chicken broth and water. It should mostly cover the chicken. Add the parmesan rind, bay leaves, and fresh thyme sprigs. Sprinkle in the salt and pepper. Bring the whole thing to a gentle boil, then immediately reduce the heat to a simmer. You want small, lazy bubbles, not a rolling boil. Let it simmer uncovered for 15 minutes. This is where the magic happensโ€”the chicken cooks through, the parmesan rind melts its savory goodness into the liquid, and the h…
  5. Shred the Chicken (5 minutes): After 15 minutes, use your tongs to carefully remove the chicken thighs to a cutting board. They’ll be hot, so let them rest for 2 minutes. Once cool enough to handle, remove and discard the skin and bones. Shred the meat into bite-sized pieces using two forks. It should be incredibly tender and fall apart easily.
  6. Cook the Noodles (6-8 minutes): While the chicken is resting, bring the broth back to a gentle boil. Remove the bay leaves, thyme stems, and the parmesan rind (it will have softened and released its flavor). Add the egg noodles directly to the pot. Cook according to package directions, usually about 6-8 minutes. Stir occasionally to prevent sticking.
  7. Finish and Serve (2 minutes): Once the noodles are tender, return the shredded chicken to the pot. Stir in the fresh parsley and lemon juice. If you’re using the heavy cream for an extra-luxurious version, stir it in now. Taste the broth and adjust the salt and pepper. I usually add another pinch of salt here. Serve immediately in deep bowls.

Notes

For best results, cook noodles separately if storing leftovers to prevent them from becoming mushy. The parmesan rind is the secret to deep umami flavor; keep rinds in the freezer for this purpose. Season in layers, adding salt gradually and adjusting at the end. Let the soup rest for 10 minutes after cooking for flavors to meld.
