This hearty and comforting soup comes together in under 30 minutes with simple ingredients like smoky kielbasa, creamy cannellini beans, and tender vegetables in a savory broth. It’s the perfect meal for chilly nights when you need something warm and satisfying without spending hours in the kitchen.

Ingredients

Scale
  • 12 oz kielbasa, sliced into rounds
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 4 cups low-sodium chicken broth
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 1 bay leaf
  • 2 cups kale or spinach, roughly chopped
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep your ingredients first (5 minutes). Dice the onion, carrots, and celery into similar-sized pieces. Mince the garlic. Slice the kielbasa into rounds about 1/4 inch thick. Drain and rinse the beans. Chop the kale.
  2. Brown the kielbasa (5 minutes). Heat your pot over medium heat and add the sliced kielbasa. Cook for about 4-5 minutes, stirring occasionally, until the pieces are browned on both sides. Remove the kielbasa with a slotted spoon and set aside on a plate. Leave about a tablespoon of the rendered fat in the pot. If your kielbasa is lean, add a tablespoon of olive oil.
  3. Sauté the aromatics (5 minutes). Add the diced onion, carrots, and celery to the pot. Cook over medium heat for about 5 minutes, stirring occasionally, until the vegetables start to soften and the onions become translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  4. Add the spices (1 minute). Sprinkle the smoked paprika, dried thyme, and dried oregano over the vegetables. Stir constantly for about 30 seconds to toast the spices. Be careful not to burn them.
  5. Add the broth and beans (2 minutes). Pour in the chicken broth and add the drained beans and the bay leaf. Use your wooden spoon to scrape up any browned bits from the bottom of the pot. Bring the soup to a gentle boil.
  6. Simmer (10 minutes). Reduce the heat to low and let the soup simmer for about 10 minutes, allowing the flavors to meld together. Stir occasionally.
  7. Add the greens and kielbasa (3 minutes). Stir in the chopped kale and the browned kielbasa. Cook for another 2-3 minutes until the kale is wilted and tender. If using spinach, cook for about 1 minute.
  8. Season and serve (2 minutes). Remove the bay leaf. Taste the soup and add salt and black pepper as needed. Ladle into bowls, garnish with fresh parsley if desired, and serve hot with crusty bread.

Notes

Don’t skip browning the kielbasa—it adds essential depth of flavor. Use a heavy pot for even heat distribution. Control salt carefully as kielbasa and broth are already salty. Let the soup rest for 10-15 minutes before serving for better flavor. This soup tastes even better the next day. For freezing, add fresh greens after thawing and reheating.
