Cozy Kielbasa and White Bean Soup – Easy 30-Minute Recipe

  • 1 pound (450g) kielbasa sausage, sliced into ½-inch rounds
  • 1 medium yellow onion, diced (about 1 cup)
  • 2 large carrots, peeled and diced (about 1 cup)
  • 2 celery stalks, diced (about ½ cup)
  • 4 cloves garlic, minced
  • 4 cups (960ml) low-sodium chicken broth
  • 2 cans (15 oz each) cannellini beans or great northern beans, drained and rinsed
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt, or to taste
  • 1 bay leaf
  • Fresh parsley, chopped (for serving, optional)
  • Grated Parmesan cheese (for serving, optional)
  • Crusty bread or garlic bread (for serving, optional)

Instructions

  1. Sear the Kielbasa (5 minutes): Heat the olive oil in a large pot over medium-high heat. Add the sliced kielbasa in a single layer (work in batches if needed). Cook for 2-3 minutes per side, until nicely browned and caramelized. Use a slotted spoon to transfer the kielbasa to a plate.
  2. Sauté the Aromatics (5 minutes): Reduce the heat to medium. Add the diced onion, carrots, and celery to the pot with the rendered fat. Cook, stirring occasionally, for 5 minutes, until the vegetables have softened and the onion is translucent. Add the minced garlic and cook for another 30 seconds, until fragrant.
  3. Build the Broth (2 minutes): Pour in the chicken broth, using a wooden spoon to scrape up any browned bits from the bottom of the pot. Add the dried thyme, rosemary, smoked paprika, black pepper, salt, and the bay leaf. Stir to combine.
  4. Add the Beans and Simmer (10 minutes): Add the drained and rinsed white beans to the pot. Bring the soup to a gentle boil, then reduce the heat to low, cover, and let it simmer for 10 minutes.
  5. Create the Creamy Texture (2 minutes): After 10 minutes, remove the pot from the heat. Using a potato masher or the back of a fork, gently smash about half of the beans right in the pot. Stir the smashed beans into the soup.
  6. Finish and Serve (2 minutes): Return the browned kielbasa to the pot. Stir everything together and let it warm through for another minute or two. Remove the bay leaf. Taste and adjust seasoning with more salt and pepper if needed. Ladle the soup into bowls and serve hot.

Notes

Don’t skip searing the kielbasa for the best flavor. Smash the beans with a masher for a rustic creamy texture, not a blender. Season at the end to adjust for saltiness of broth and sausage. Always drain and rinse canned beans to avoid a salty, murky soup. For a thicker soup, smash more beans or simmer uncovered longer.
