A quick and easy one-pot lasagna soup that delivers all the comforting flavors of traditional lasagna without the fuss. Ready in under an hour, this hearty soup features Italian sausage, broken lasagna noodles, and a creamy ricotta topping.

Ingredients

Scale
  • 1 pound Italian sausage, casings removed
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes (preferably San Marzano)
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 8 ounces lasagna noodles (about 8–10 noodles), broken into 1-2 inch pieces
  • 3 cups fresh spinach, roughly chopped
  • 1 cup whole milk ricotta cheese
  • ¼ cup fresh parsley, chopped
  • ½ cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the Italian sausage (casings removed) and cook for 6-8 minutes, breaking it up with a wooden spoon, until browned and cooked through. Transfer the sausage to a plate and set aside, leaving about 1 tablespoon of drippings in the pot.
  2. Reduce heat to medium. Add the diced onion and cook for 4-5 minutes, stirring occasionally, until softened and translucent. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Pour in the crushed tomatoes and chicken broth, stirring to scrape up any browned bits from the bottom of the pot. Add the dried oregano, dried basil, red pepper flakes (if using), and a pinch of salt and black pepper. Stir to combine.
  4. Bring the soup to a boil over high heat. Add the broken lasagna noodles and stir well. Reduce heat to medium-low, cover, and simmer for 12-15 minutes, stirring occasionally, until the noodles are tender but still al dente.
  5. Stir in the chopped spinach and reserved cooked sausage. Cook for 2-3 minutes until the spinach has wilted. Taste and adjust seasoning with more salt and pepper if needed.
  6. While the soup simmers, place the ricotta cheese in a small bowl. Season with a pinch of salt, a crack of black pepper, and a drizzle of olive oil if desired. Stir gently to combine.
  7. Ladle the hot soup into wide serving bowls. Add a generous dollop of the seasoned ricotta in the center of each bowl. Sprinkle with fresh parsley and grated Parmesan cheese. Serve immediately.

Notes

For meal prep, cook noodles separately and add to individual bowls before pouring hot soup over them to prevent mushiness. The soup base freezes well without noodles. For a vegetarian version, use plant-based Italian sausage and vegetable broth.
