Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • 1 large egg, room temperature
  • ⅓ cup (80ml) molasses
  • 2 cups (250g) all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • 2 cups (240g) powdered sugar
  • 2 tablespoons (30ml) meringue powder
  • 3–4 tablespoons (45-60ml) water
  • ½ teaspoon vanilla extract
  • Food coloring (optional)

Instructions

  1. Line two baking sheets with parchment paper or silicone mats. Do not grease.
  2. In a large mixing bowl, beat softened butter and granulated sugar on medium speed until light and fluffy, about 3 minutes. Scrape down sides halfway through.
  3. Add room-temperature egg and molasses. Beat on medium speed until fully incorporated, about 1 minute. Scrape bowl again.
  4. In a separate bowl, whisk together flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  5. Gradually add dry ingredients to wet ingredients on low speed, mixing just until flour disappears. Do not overmix.
  6. Fill cookie press about two-thirds full with dough. Choose a disc shape. Press a test cookie onto baking sheet to check consistency.
  7. Press cookies onto prepared baking sheets, spacing about 1 inch apart. Hold press perpendicular and press firmly, then lift straight up.
  8. Bake at 375°F (190°C) for 8-10 minutes, until edges are just barely golden. Do not overbake.
  9. Let cookies cool on baking sheet for 2 minutes, then transfer to a cooling rack. Cool completely before icing.
  10. While cookies cool, make royal icing: whisk together powdered sugar and meringue powder. Add 3 tablespoons water and vanilla extract. Whisk until smooth. Adjust consistency as needed.
  11. Transfer royal icing to a piping bag or squeeze bottle. Drizzle over cooled cookies. Let icing set at room temperature for about 30 minutes until firm.

Notes

Butter should be soft but not melted. If dough is sticky, chill for 10-15 minutes. Watch bake time closely; edges should be just golden. Royal icing consistency should be like warm honey. Cookies can be stored in an airtight container for up to 1 week. Un-iced cookies can be frozen for up to 3 months.
