Ingredients

Scale
  • 1 cup unsalted butter (2 sticks)
  • 1 ½ cups granulated sugar
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon fine sea salt
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 ½ cups pecan halves, toasted
  • 1 cup light brown sugar, packed
  • 1 ½ cups boiling water
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1–2 tablespoons bourbon (e.g., Buffalo Trace or Maker’s Mark)
  • ½ teaspoon vanilla extract (optional, for whipped cream)

Instructions

  1. Preheat your oven to 350°F (175°C). Place the oven rack in the middle position.
  2. Melt ½ cup (1 stick) of butter in a small saucepan over low heat. Remove from heat and let cool slightly.
  3. In a medium bowl, whisk together 1 ½ cups granulated sugar, 1 cup all-purpose flour, 2 teaspoons baking powder, and ½ teaspoon salt.
  4. Add 1 cup whole milk and 1 teaspoon vanilla extract to the dry ingredients. Stir until just combined (a few lumps are okay).
  5. Pour the batter into a 9×13-inch baking dish and spread evenly.
  6. Sprinkle 1 ½ cups toasted pecan halves evenly over the batter. Do not stir.
  7. In a small bowl, combine 1 cup packed light brown sugar with the remaining ½ cup melted butter. Stir until it looks like wet sand. Sprinkle this mixture evenly over the pecans. Do not stir.
  8. Carefully pour 1 ½ cups boiling water over the entire dish. Do not stir.
  9. Bake for 35-40 minutes, until the top is golden brown and the edges are bubbly. The center should be set but slightly jiggly.
  10. Let the cobbler cool for 10-15 minutes before serving.
  11. While the cobbler cools, make the bourbon whipped cream: In a chilled bowl, combine 1 cup cold heavy whipping cream, 2 tablespoons powdered sugar, and ½ teaspoon vanilla extract (if using). Whip on medium-high speed until soft peaks form. Add 1-2 tablespoons bourbon and continue whipping until stiff peaks form.
  12. Serve the cobbler warm, topped with a generous dollop of bourbon whipped cream.

Notes

Toast pecans before using for best flavor. Do not overmix the batter. The boiling water creates a caramel layer—do not stir after adding. Let cobbler cool 10-15 minutes before serving to allow filling to set. Bourbon whipped cream is best made fresh. For a non-alcoholic version, skip bourbon or use bourbon extract.
