  • 2 tablespoons (25g) granulated sugar
  • 1 tablespoon (8g) all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 tablespoon (15ml) lemon juice
  • 3 tablespoons (45ml) salted caramel sauce, divided
  • 1/3 cup (30g) old-fashioned rolled oats
  • 1/4 cup (30g) all-purpose flour
  • 1/4 cup (50g) packed light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 3 tablespoons (42g) unsalted butter, cold and cut into small cubes
  • Vanilla ice cream or whipped cream for serving (optional)
  • Extra salted caramel sauce for drizzling (optional)
  • Flaky sea salt for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and place a baking sheet on the middle rack.
  2. Peel, core, and slice apples into 1/4-inch thick slices. Place in a medium mixing bowl.
  3. Add granulated sugar, 1 tablespoon flour, 1/2 teaspoon cinnamon, nutmeg, and lemon juice to the apples. Toss to coat evenly. Drizzle in 2 tablespoons of salted caramel sauce and gently toss again. Set aside.
  4. In a small mixing bowl, combine rolled oats, 1/4 cup flour, brown sugar, 1/4 teaspoon cinnamon, and 1/8 teaspoon salt. Whisk together.
  5. Add cold cubed butter to the dry ingredients. Using a pastry cutter or two forks, cut the butter in until the mixture resembles coarse meal with some pea-sized butter pieces. Do not overwork.
  6. Divide the apple mixture evenly between two 10-ounce ramekins (or use a small 1-quart baking dish). Sprinkle the crisp topping evenly over the apples without pressing down.
  7. Place ramekins on the prepared baking sheet. Bake for 30-35 minutes, until topping is golden brown and filling is bubbling around the edges. Apples should be tender when pierced with a fork.
  8. Remove from oven and let cool on a wire rack for at least 10 minutes to allow the filling to set.
  9. Just before serving, drizzle the remaining 1 tablespoon of salted caramel sauce over each crisp. Add a scoop of vanilla ice cream and a pinch of flaky sea salt if desired.

Notes

For a gluten-free version, use a 1:1 gluten-free baking flour blend. For a nutty crunch, add 1/4 cup chopped pecans or walnuts to the topping. If the topping browns too quickly, tent loosely with foil for the last 10 minutes. Letting the crisp rest after baking is crucial for the filling to set.
