  • 2 cups rolled oats (old-fashioned)
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 3 cups milk (any kind; whole milk for extra creaminess, oat or almond for dairy-free)
  • 1 cup water
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 cup packed brown sugar (light or dark)
  • 1/4 teaspoon salt
  • Optional toppings: chopped pecans, toasted walnuts, dried cranberries, maple syrup, butter

Instructions

  1. Grease the slow cooker insert with non-stick cooking spray or butter.
  2. In a small bowl, whisk together rolled oats, pumpkin pie spice, cinnamon, and salt.
  3. In a separate bowl or large liquid measuring cup, whisk together milk, water, brown sugar, and vanilla extract until brown sugar is mostly dissolved.
  4. Pour the dry oat mixture into the greased slow cooker. Pour the wet mixture over the top. Do not stir.
  5. Cook on low for 7-8 hours (do not cook on high).
  6. About 10 minutes before serving, stir in the pumpkin puree until fully incorporated. If too thick, stir in a splash of warm milk or water.
  7. Taste and adjust sweetness or spice as desired.
  8. Serve warm with desired toppings.

Notes

For best texture, use rolled oats, not instant or steel-cut. Add pumpkin puree at the end to preserve bright pumpkin flavor. Grease the slow cooker generously to prevent sticking. Do not lift the lid during cooking. Leftovers keep in the refrigerator for up to 5 days and freeze well for up to 3 months.
