A light and fluffy no-bake cheesecake dip with fresh apples, caramel, and a salty-sweet pretzel crunch. Ready in 15 minutes and perfect for parties.

Ingredients

Scale
  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 cup frozen whipped topping, thawed
  • 1/2 cup caramel sauce (for the dip)
  • 1 medium apple, finely diced (Granny Smith, Honeycrisp, or Fuji)
  • 1 teaspoon lemon juice
  • 1/4 cup caramel sauce (for drizzling)
  • 1/4 cup chopped pecans or walnuts (optional)
  • Flaky sea salt (e.g., Maldon)
  • 1 bag pretzel rods or thick pretzel sticks
  • 1/2 cup white chocolate chips (optional)
  • 1 teaspoon coconut oil (optional)

Instructions

  1. Soften the cream cheese: Remove cream cheese from fridge at least 60 minutes before starting. It should be soft enough to leave an indent when pressed.
  2. Prep the apple: Peel and finely dice the apple into pea-sized pieces. Toss with 1 teaspoon lemon juice in a small bowl to prevent browning. Set aside.
  3. Beat the cream cheese: In a large mixing bowl, beat softened cream cheese with an electric mixer on medium speed until completely smooth and fluffy, about 2 minutes. Scrape down sides and bottom of bowl.
  4. Add brown sugar and vanilla: Add brown sugar, vanilla extract, and cinnamon. Beat on medium speed until well combined and mixture looks like thick frosting, about 1 minute. Scrape bowl again.
  5. Fold in whipped topping: Add thawed whipped topping to cream cheese mixture. Gently fold with a rubber spatula until just combined. Do not overmix.
  6. Fold in apples: Gently fold diced apples into the dip until evenly distributed.
  7. Assemble the dip: Transfer dip to a serving dish and spread into an even layer. Drizzle 1/4 cup caramel sauce over the top. Sprinkle with chopped nuts (if using), a light dusting of cinnamon, and a pinch of flaky sea salt.
  8. Optional: Make dipped pretzels: Melt white chocolate chips with coconut oil in microwave in 30-second bursts. Dip ends of pretzel rods about 2 inches deep, let excess drip off, and place on parchment-lined baking sheet. Sprinkle with cinnamon sugar while wet. Let set for 15 minutes at room temperature or 5 minutes in fridge.
  9. Serve immediately: Arrange pretzel dippers around the dip or serve on the side. Best served within an hour of assembly.

Notes

Cream cheese must be fully softened to avoid lumps. Do not skip lemon juice on apples to prevent browning. Fold whipped topping gently to keep dip light and fluffy. Flaky sea salt is not optionalโ€”it balances the sweetness. Make dip base up to 24 hours ahead; fold in apples just before serving. Do not freeze.
