  • 1/2 cup (120ml) milk (any kind)
  • 1/4 cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 scoop (about 30g) vanilla protein powder (optional)
  • 1 tablespoon (15g) chia seeds
  • 1 tablespoon (15ml) maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a small bowl or mason jar, combine the milk, Greek yogurt, peanut butter, maple syrup, and vanilla extract. Whisk or stir vigorously until the peanut butter is fully dissolved.
  2. Add the rolled oats, chia seeds, protein powder, and a pinch of salt. Stir until well combined, ensuring no dry pockets remain.
  3. If using a mason jar, seal and shake vigorously. Otherwise, stir thoroughly.
  4. Refrigerate for at least 4 hours, ideally overnight, until the oats and chia seeds have absorbed the liquid and the mixture is thick and creamy.
  5. Serve cold or at room temperature. Stir well before eating. If too thick, add a splash of milk to loosen. Top with desired toppings.

Notes

For best texture, use rolled oats (not quick oats). If skipping protein powder, add an extra tablespoon of peanut butter and a splash of maple syrup. Warm peanut butter for 10 seconds in the microwave to mix smoothly. Store in the fridge for up to 5 days; do not freeze. Toppings should be added just before serving to prevent sogginess.
