A rich, chocolaty, and tart keto-friendly mousse made with 85% dark chocolate, heavy cream, and dark cherries. This easy low-carb dessert is silky, indulgent, and perfect for special occasions or a quick treat.

  • 4 oz (115g) 85% dark chocolate, chopped
  • 1 cup (240ml) cold heavy cream (full-fat)
  • ½ cup (75g) fresh or jarred dark cherries, pitted
  • 2 tbsp powdered erythritol (optional, adjust to taste)
  • 1 tsp vanilla extract
  • 1 tsp lemon juice
  • Pinch of salt

Instructions

  1. Melt the chopped dark chocolate in a heatproof bowl over simmering water (double boiler method), stirring gently until smooth, about 5 minutes. Alternatively, microwave in 20-second bursts, stirring in between. Set aside to cool slightly but not harden.
  2. In a large chilled bowl, whip the cold heavy cream using an electric mixer or whisk on medium-high speed until soft peaks form, about 3-4 minutes. Avoid overwhipping.
  3. Add powdered erythritol, vanilla extract, lemon juice, and a pinch of salt to the whipped cream. Gently mix to combine and adjust sweetness if needed.
  4. Pour about one-third of the whipped cream into the melted chocolate. Fold gently but thoroughly to lighten the chocolate.
  5. Fold the chocolate mixture back into the remaining whipped cream carefully to keep it airy and smooth.
  6. Gently fold in the pitted dark cherries to distribute evenly without breaking them apart.
  7. Spoon the mousse into individual serving glasses or ramekins. Cover with plastic wrap and refrigerate for at least 2 hours, ideally 4, to let flavors meld and the mousse set.
  8. Serve chilled, optionally garnished with whole cherries or a light dusting of cocoa powder.

Notes

If chocolate seizes or looks grainy, add warm cream one teaspoon at a time while stirring to rescue it. Do not skip chilling; mousse firms up and flavors deepen as it rests. For dairy-free version, substitute heavy cream with chilled coconut cream and use dairy-free chocolate. Adjust sweetener to taste; erythritol can be replaced with monk fruit sweetener, stevia blends, or allulose.
