  • ½ cup (120ml) milk of choice
  • ¼ cup (60g) Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon (15ml) honey or maple syrup
  • ½ teaspoon vanilla extract
  • 1 scoop (30g) chocolate protein powder (optional)
  • For toppings (optional): extra peanut butter drizzle, dark chocolate chips, sliced banana, crushed peanuts, cinnamon sprinkle

Instructions

  1. Combine the wet ingredients: In your jar or container, add ½ cup milk, ¼ cup Greek yogurt, 2 tablespoons peanut butter, 1 tablespoon honey or maple syrup, and ½ teaspoon vanilla extract. If using protein powder, add it now. Whisk or stir until smooth and well combined.
  2. Add the dry ingredients: Pour in ½ cup rolled oats and 1 tablespoon chia seeds. Stir well until all oats are coated. Scrape the bottom and sides of the jar.
  3. Check the consistency: The mixture should look a bit thin—that’s normal. The oats and chia seeds will absorb the liquid overnight.
  4. Seal and refrigerate: Put the lid on and refrigerate for at least 6 hours, but overnight (8-12 hours) is ideal.
  5. Add toppings in the morning: Give it a good stir. If too thick, stir in a splash of milk.
  6. Finish and serve: Add toppings like extra peanut butter, chocolate chips, banana, crushed peanuts, or cinnamon. Eat cold or let sit at room temperature for 10 minutes.

Notes

Use rolled oats, not quick oats. Mix wet ingredients first to avoid clumps. Don’t skip chia seeds—they create the pudding-like texture. Adjust sweetness based on protein powder. Let sit at least 6 hours, ideally 8-12. Store in fridge for up to 5 days. Do not freeze.
