These Creamy Peanut Butter Banana Overnight Oats are the perfect make-ahead breakfast that feels like a treat. With simple ingredients and minimal prep, you can wake up to a rich, satisfying meal that’s ideal for hosting or busy mornings.

Ingredients

Scale
  • 2 cups (180g) rolled oats
  • 2 cups (480ml) milk (any kind)
  • 1/2 cup (130g) creamy peanut butter
  • 2 large ripe bananas, mashed
  • 2–3 tablespoons (30-45ml) maple syrup or honey
  • 2 tablespoons (20g) chia seeds (optional)
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of salt (about 1/8 teaspoon)
  • Optional toppings: sliced banana, drizzle of peanut butter, chopped peanuts, cinnamon

Instructions

  1. In a mixing bowl, mash the ripe bananas with a fork until mostly smooth with a few small lumps.
  2. Add the creamy peanut butter to the mashed bananas and mash/stir until fully combined into a thick paste.
  3. Pour in the milk, maple syrup or honey, and vanilla extract. Whisk until the peanut butter mixture is fully dissolved.
  4. Stir in the rolled oats, chia seeds, and a pinch of salt until all oats are coated and submerged. Do not overmix.
  5. Divide the mixture evenly among 4-6 mason jars or airtight containers, leaving about an inch of space at the top.
  6. Seal the jars and refrigerate for at least 4-6 hours, preferably overnight (8-12 hours).
  7. Before serving, stir the oats to redistribute any settled liquid. Add desired toppings and serve cold or at room temperature.

Notes

For best results, use ripe bananas with brown spots. Stir peanut butter well before measuring to avoid oil separation. The oats will keep in the fridge for up to 5 days. If too thick after refrigeration, stir in a splash of milk. To serve warm, microwave a single serving for 30-45 seconds.
