  • 2 pounds boneless, skinless chicken breasts (about 34 medium breasts)
  • 16 ounces cream cheese, softened and cut into cubes
  • 1 cup ranch dressing
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot Original)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Tortilla chips, for serving
  • Celery sticks and carrot sticks, for serving
  • Optional garnishes: chopped green onions, crumbled blue cheese, extra hot sauce

Instructions

  1. Place the 2 pounds of boneless, skinless chicken breasts in the bottom of your slow cooker.
  2. Cut the 16 ounces of softened cream cheese into 1-inch cubes and scatter them over the chicken.
  3. In a small bowl, whisk together 1 cup of ranch dressing and 1/2 cup of buffalo wing sauce. Pour this mixture evenly over the chicken and cream cheese. Give everything a gentle stir.
  4. Cover the slow cooker and cook on LOW for 3 to 4 hours, or on HIGH for 2 to 3 hours, until the chicken is tender enough to shred easily with a fork.
  5. Once the chicken is cooked through, carefully remove it from the slow cooker using tongs and place it on a cutting board. Use two forks to shred the chicken into bite-sized pieces.
  6. Return the shredded chicken to the slow cooker. Add 2 cups of shredded sharp cheddar and 1 cup of shredded Monterey Jack cheese. Stir everything together until the cheese is melted and the dip is smooth and creamy.
  7. Cover the slow cooker again and let it cook on LOW for another 15 to 30 minutes, until hot and bubbly. Give it one last stir before serving.
  8. Switch the slow cooker to the WARM setting and serve directly from the pot. Garnish with chopped green onions, a sprinkle of extra cheese, or a few dashes of hot sauce if desired. Provide sturdy tortilla chips, celery sticks, and carrot sticks for dipping.

Notes

For best results, use full-fat cream cheese and shred your own cheese from blocks. If the dip is too thin, let it cook uncovered for 15-20 minutes. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months.
