A quick and indulgent one-pan salmon dish with a creamy Tuscan sauce featuring sun-dried tomatoes, spinach, and Parmesan. Perfect for impressing guests or a satisfying weeknight dinner in under 30 minutes.

  • 4 salmon fillets (about 6 oz / 170g each), skin-on or skinless
  • 1 teaspoon salt (kosher or sea salt)
  • ½ teaspoon black pepper, freshly ground
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes (about 60g), drained and roughly chopped
  • 1 cup heavy cream (240ml)
  • ½ cup chicken or vegetable broth (120ml), low-sodium
  • ½ cup grated Parmesan cheese (about 50g), freshly grated
  • 3 cups fresh spinach (about 90g), roughly chopped if large
  • ¼ teaspoon red pepper flakes (optional)
  • ¼ cup fresh basil leaves, chopped
  • Juice of ½ lemon

Instructions

  1. Prep the salmon: Pat the salmon fillets dry with paper towels. Season both sides with salt, pepper, and garlic powder. Let sit at room temperature for about 10 minutes.
  2. Sear the salmon: Heat olive oil in a large skillet over medium-high heat until shimmering. Place salmon fillets skin-side down (if using skin-on) in the pan. Sear for 3-4 minutes until golden and crispy. Flip and cook for another 2-3 minutes for medium doneness. Transfer to a plate and tent loosely with foil. Do not wipe out the pan.
  3. Start the sauce: Reduce heat to medium. Add butter to the same pan. Once melted and foamy, add minced garlic and sun-dried tomatoes. Stir constantly for about 1 minute until fragrant. Add red pepper flakes if using.
  4. Build the creamy base: Pour in heavy cream and chicken broth, stirring to scrape up browned bits from the pan. Bring to a gentle simmer and cook for 2-3 minutes, stirring occasionally, until slightly thickened.
  5. Add Parmesan and spinach: Reduce heat to low. Sprinkle in grated Parmesan and stir until melted and smooth. Add fresh spinach in handfuls, stirring until wilted, about 2 minutes.
  6. Finish the dish: Squeeze in lemon juice and stir. Taste and adjust seasoning. Return salmon fillets to the pan, spooning sauce over the top. Warm through for 1-2 minutes.
  7. Serve immediately: Sprinkle with fresh basil and extra Parmesan if desired.

Notes

Pat salmon dry for best sear. Use fresh garlic and freshly grated Parmesan. Let cream come to room temperature to prevent curdling. Don’t skip lemon juice—it balances the richness. For a dairy-free version, use full-fat coconut milk and dairy-free Parmesan. For a lighter version, use half-and-half and reduce butter to 1 tablespoon.
