Crispy Bacon Grilled Hot Dogs with Caramelized Onions

A flavorful twist on classic hot dogs featuring thick-cut bacon wrapped around the dogs and topped with sweet, slow-caramelized onions. Perfect for quick grill nights and crowd-pleasing cookouts.

  • Hot dogs (beef, pork, or chicken, natural casing preferred)
  • Thick-cut bacon strips
  • 2 medium yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 teaspoon brown sugar
  • Splash of olive oil
  • Hot dog buns, soft and slightly toasted
  • Optional toppings: mustard, ketchup, chopped fresh parsley

Instructions

  1. Peel and slice two medium yellow onions into thin, even slices.
  2. Heat 2 tablespoons of butter and a splash of olive oil in a cast iron skillet over medium-low heat.
  3. Add the onions, sprinkle with 1 teaspoon of brown sugar, and stir to coat.
  4. Cook gently, stirring every few minutes, for about 25-30 minutes until deeply golden and caramelized.
  5. Wrap each hot dog tightly with thick-cut bacon strips, overlapping slightly to hold the bacon in place. Secure with a toothpick if needed.
  6. Preheat grill to medium-high heat (around 375°F). Clean and lightly oil the grates.
  7. Place bacon-wrapped hot dogs on the grill and turn every 2-3 minutes to crisp bacon evenly, about 10-12 minutes total.
  8. During the last few minutes, split hot dog buns and toast cut side down on the grill until golden and warm.
  9. Assemble hot dogs in buns and top generously with caramelized onions and optional condiments.

Notes

Keep an eye on the bacon while grilling to avoid flare-ups. Add a splash of water to onions if they start sticking. For gluten-free, use gluten-free buns or lettuce wraps. For dairy-free, substitute butter with olive or coconut oil.
