  • 1/4 teaspoon black pepper
  • 1/2 cup hot sauce (Frank’s RedHot recommended)
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon honey or maple syrup (optional)
  • 1/2 teaspoon garlic powder (for sauce)
  • Ranch or blue cheese dressing for dipping (optional)
  • Fresh celery sticks (optional)
  • Chopped green onions or fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 450°F (232°C).
  2. Wash and cut cauliflower into bite-sized florets (about 1 to 1.5 inches). Pat dry thoroughly.
  3. In a large bowl, whisk together flour, water or milk, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth (consistency of thin pancake batter).
  4. Pour batter into a large resealable plastic bag. Add cauliflower florets, seal with a little air inside, and shake gently until evenly coated.
  5. Line a baking sheet with parchment paper. Arrange coated florets in a single layer, not touching.
  6. Bake for 15 minutes at 450°F.
  7. Remove from oven, flip each floret, and bake for another 10-12 minutes until golden brown and crispy around edges.
  8. While cauliflower bakes, make buffalo sauce: In a small saucepan over low heat (or microwave in 20-second bursts), combine hot sauce, melted butter, honey or maple syrup (if using), and garlic powder. Whisk until smooth and warm.
  9. When cauliflower is done, transfer to a large bowl. Pour warm buffalo sauce over and toss gently to lightly coat (do not drench).
  10. Optional extra-crispy step: Return sauced florets to baking sheet and bake for another 5 minutes at 450°F.
  11. Serve immediately with ranch or blue cheese dressing, celery sticks, and garnish if desired.
