  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/4 cup honey (85 g), preferably raw or wildflower
  • 2 tablespoons sriracha sauce (30 ml), adjust to heat preference
  • 1 tablespoon rice vinegar (15 ml)
  • 1 tablespoon olive oil (15 ml)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with foil and place a wire rack on top.
  2. Pat the chicken wings dry thoroughly with paper towels to remove moisture.
  3. In a large bowl, toss wings with baking powder, salt, black pepper, garlic powder, and smoked paprika until evenly coated.
  4. Arrange the wings in a single layer on the wire rack, leaving space between each piece.
  5. Bake for 25 minutes, then flip the wings and bake for another 20-25 minutes until golden and crispy.
  6. While wings bake, prepare the glaze by warming honey, sriracha, rice vinegar, and olive oil in a small saucepan over low heat, stirring until smooth and slightly thickened (3-5 minutes). Avoid boiling.
  7. Once wings are crispy, transfer to a large bowl and toss gently with the warm glaze until fully coated.
  8. Serve immediately for best crunch or keep warm in the oven at 200°F (90°C) if needed.

Pat wings dry thoroughly to ensure crispiness. Use baking powder (not baking soda) to raise skin pH and create crunch. Flip wings halfway through baking for even crisping.
