Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Lightly grease your baking dish with butter or non-stick spray.
  2. Peel, pit, and slice 6 large peaches into roughly ยฝ-inch (1.25 cm) thick slices. Place them in a mixing bowl.
  3. Add ยฝ cup light brown sugar, 1 tablespoon fresh lemon juice, 2 tablespoons cornstarch, 1 teaspoon ground cinnamon, and a pinch of salt to the peaches. Toss gently until evenly coated. Set aside.
  4. Transfer the peach mixture to your baking dish, spreading it out evenly. Bake for about 15 minutes to soften the peaches.
  5. While peaches bake, melt ยฝ cup unsalted butter in a medium saucepan over medium heat. Stir frequently as the butter foams and turns golden brown with a nutty aroma (about 5-7 minutes). Remove from heat immediately.
  6. In a separate bowl, combine 1 cup rolled oats, ยฝ cup sliced almonds, ยพ cup all-purpose flour, ยผ cup granulated sugar, and 1 teaspoon vanilla extract (optional). Pour the browned butter over the mixture and stir until crumbly and evenly coated.
