Crispy-edged, tender delicata squash rings with a sticky, sweet maple glaze. A quick and easy crowd-pleaser perfect for fall entertaining.

Ingredients

Scale
  • 2 medium delicata squash (about 1.5 pounds total)
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons pure maple syrup
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika (optional)
  • 4–5 sprigs fresh thyme (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Wash the delicata squash. Trim off the stem end and bottom. Slice crosswise into ½-inch thick rings. Remove seeds and stringy pulp from the center of each ring.
  3. Place squash rings in a large mixing bowl. Drizzle with olive oil and toss to coat. Sprinkle with salt, pepper, garlic powder, and smoked paprika (if using). Toss again.
  4. Arrange seasoned rings in a single layer on the prepared baking sheet, ensuring they do not overlap.
  5. Roast for 10 minutes.
  6. Remove from oven. Brush or drizzle maple syrup evenly over the rings. Gently flip each ring with a spatula to coat both sides. Scatter fresh thyme sprigs over the pan if using.
  7. Return to oven and roast for another 10-12 minutes, until edges are deeply caramelized and centers are tender. Watch carefully to prevent burning.
  8. Remove from oven and let rest on the baking sheet for 2-3 minutes. Transfer to a serving platter, garnish with fresh thyme leaves or flaky sea salt if desired, and serve warm.

Notes

For best results, slice squash uniformly ½-inch thick. Do not overcrowd the pan. Watch the maple syrup carefully in the last 5 minutes to prevent burning. Use room temperature maple syrup for easier brushing. Season in layers: season before roasting and add a pinch of flaky sea salt before serving.
