  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs / 680 g)
  • 4 tablespoons unsalted butter, softened (about 56 g)
  • ยฝ cup finely grated Parmesan cheese (about 50 g)
  • 4 cloves garlic, minced
  • 1 pound small Yukon Gold potatoes, halved or quartered (450 g)
  • 2 tablespoons olive oil (30 ml)
  • 1 tablespoon fresh rosemary, chopped (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon paprika
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat your oven to 425ยฐF (220ยฐC).
  2. In a bowl, toss halved Yukon Gold potatoes with olive oil, rosemary, salt, pepper, and half the paprika. Spread evenly on a baking sheet or one side of a large oven-safe skillet. Roast for 25-30 minutes, turning halfway through, until golden and tender.
  3. In a small bowl, combine softened butter, minced garlic, grated Parmesan, remaining paprika, salt, and pepper. Mix well to create the garlic butter parmesan mixture.
  4. Pat chicken thighs dry with paper towels. Season both sides lightly with salt and pepper.
  5. Heat an oven-safe skillet over medium-high heat and add a little olive oil.
  6. Place chicken thighs skin-side down in the hot skillet. Sear for 5-6 minutes until skin is golden and crispy. Flip and cook the other side for 2 minutes. Remove from heat.
  7. Generously spread the garlic butter parmesan mixture over the skin of each chicken thigh.
  8. Transfer the skillet with chicken to the oven (or place chicken on a baking sheet if potatoes are roasted separately). Roast for 15-20 minutes until chicken reaches an internal temperature of 165ยฐF (74ยฐC) and the topping is bubbly and golden.
  9. Drizzle fresh lemon juice over the chicken once out of the oven.
  10. Serve chicken thighs alongside roasted potatoes, garnished with extra rosemary if desired.

Notes

Pat chicken thighs dry before searing to ensure crispy skin. Use a cast iron skillet for best sear results. Avoid overcrowding the pan when searing. Add garlic butter parmesan mixture after flipping and finish cooking in the oven to prevent burning. Turn potatoes halfway through roasting for even crispiness. Reheat leftovers in the oven at 375ยฐF for 10-15 minutes to maintain crispiness; avoid microwaving.
