Instructions

  1. Pat the boneless chicken thighs dry with paper towels. Season both sides generously with salt and freshly ground black pepper.
  2. Place the flour in a shallow bowl. Lightly coat each chicken thigh in the flour, shaking off any excess.
  3. Pour about ยผ cup (60 ml) vegetable oil into a large non-stick or cast-iron skillet and heat over medium-high until shimmering but not smoking. Test by sprinkling a pinch of flour in the oil; it should sizzle immediately.
  4. Add chicken thighs skin-side down carefully without overcrowding the pan. Cook for 6-7 minutes until the skin is deep golden and crispy. Flip and cook the other side for 5-7 minutes until cooked through (internal temperature should reach 165ยฐF / 74ยฐC). Reduce heat if chicken browns too fast.
  5. While chicken cooks, whisk together honey, sriracha, rice vinegar, and minced garlic in a small bowl. Adjust sriracha to taste.
  6. Remove cooked chicken to a plate. Pour out excess oil from the skillet, leaving a thin layer. Return skillet to medium heat, pour in the sauce, and let it bubble gently for about 1 minute until slightly thickened.
  7. Add the chicken back to the skillet and turn to coat evenly with the sticky glaze. Cook for another minute so the sauce clings to each crispy bite.
  8. Sprinkle with sesame seeds and chopped green onions if using. Serve immediately with steamed rice or a crisp salad.
