  • 1 teaspoon Dijon mustard (optional)
  • Pinch of flaky sea salt (optional)

Instructions

  1. Prep your ingredients: Take your butter out of the fridge to soften. Wash and dry your Honeycrisp apple. Use a sharp knife to slice the apple into thin, even rounds, about ⅛-inch thick. You don’t need to peel it—the skin adds color and a bit of texture. Shred your cheddar cheese on the large holes of a box grater. You want about ½ cup of loosely packed shredded cheese.
  2. Butter the bread: Place your two slices of bread on a cutting board. Using a butter knife, spread a thin, even layer of softened butter on one side of each slice. Make sure you get all the way to the edges—this is what creates that crispy, golden crust. Don’t skimp on the butter; it’s essential.
  3. Assemble the sandwich (the right way): Place one slice of bread, butter-side down, on a clean plate. This is the bottom. Spread the shredded cheese evenly over the bread, leaving a tiny border around the edge. Then, arrange the apple slices in a single layer over the cheese. If you want, spread a thin layer of Dijon mustard on the other slice of bread (the non-buttered side) before placing it on top. Place the second slice of bread on top, butter-side up.
  4. Heat your pan: Place your skillet over medium-low heat. Give it a minute or two to warm up. You want it hot, but not smoking.
  5. Cook the first side: Carefully slide the assembled sandwich into the hot pan. You should hear a gentle sizzle. Let it cook undisturbed for 3-4 minutes. Don’t press down on the sandwich with your spatula! After about 3 minutes, gently lift a corner with your spatula to check the color. You’re looking for a deep, golden brown.
  6. Flip and cook the second side: Once the first side is perfectly golden brown, carefully flip the sandwich using your spatula. Cook for another 3-4 minutes on the second side. Again, don’t press down. If the bread is browning too quickly, turn the heat down a little.
  7. The final touch: Once both sides are beautifully golden and crispy, and the cheese is oozing out the sides, transfer the sandwich to a cutting board. Let it rest for just 30 seconds. Use a sharp knife to cut the sandwich in half, either diagonally or straight down the middle. Sprinkle with a tiny pinch of flaky sea salt, if you’re using it. Serve immediately.

For the best results, use a block of good-quality cheddar and shred it yourself. Pre-shredded cheese contains anti-caking agents that prevent smooth melting.
